This month I started addressing some psychological issues, namely my relationship with food. My husband does most of the cooking, but I’ve taken over making dinner on the weekends. I started with a couple of weekends of simple baked chicken with quinoa and vegetables. This past weekend I made stuffed bell peppers with quinoa, and the next night was chicken enchiladas with a blackberry betty for dessert. These meals may sound rich, but I used healthy, low fat/low calorie recipes, and I got high praise from the hubby.
This month I lost two pounds, and I’m getting back to an exercise routine. I look forward to putting things into high gear as we head into fall.
